The recipes

Each recipe serves 4.

1. Garlic Butter Shrimp

Juicy shrimp in a buttery garlic-lemon sauce. Serve it over rice, pasta or with crusty bread.

Ingredients: 1 lb large shrimp (peeled and deveined), 3 tbsp butter, 5 garlic cloves (minced), 1/2 tsp red pepper flakes, juice of 1 lemon, 2 tbsp chopped parsley, salt and pepper.

  1. Pat the shrimp dry and season with salt and pepper.
  2. Melt 2 tbsp butter in a large skillet over medium-high heat. Add shrimp in one layer and cook 1–2 minutes per side until pink. Move to a plate.
  3. Lower the heat. Add the rest of the butter, garlic and pepper flakes. Stir for 30 seconds.
  4. Return the shrimp, squeeze in the lemon, toss with parsley and serve.

2. Honey Garlic Chicken Bites

Sticky, sweet and savory. Kids love these.

Ingredients: 1.5 lb boneless chicken breast (cut into 1-inch pieces), 2 tbsp cornstarch, 2 tbsp oil, 3 garlic cloves (minced), 1/3 cup honey, 1/4 cup low-sodium soy sauce, 1 tbsp rice vinegar, sesame seeds and green onions to serve.

  1. Toss chicken with cornstarch, salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken 6–7 minutes, turning, until golden and cooked through.
  3. Whisk honey, soy sauce, vinegar and garlic. Pour over the chicken.
  4. Simmer 2 minutes until the sauce is thick and glossy. Top with sesame seeds and green onions.

3. Beef and Broccoli Stir-Fry

Better than takeout, and faster than delivery.

Ingredients: 1 lb flank steak (sliced thin against the grain), 1 tbsp cornstarch, 4 cups broccoli florets, 2 tbsp oil, 3 garlic cloves (minced), 1 tsp grated ginger, 1/3 cup low-sodium soy sauce, 2 tbsp brown sugar, 1 tbsp oyster sauce, 1/4 cup water.

  1. Toss beef with cornstarch. Mix soy sauce, brown sugar, oyster sauce and water in a bowl.
  2. Heat 1 tbsp oil in a skillet over high heat. Sear beef 2–3 minutes. Remove.
  3. Add remaining oil and broccoli with 2 tbsp water. Cover and steam 3 minutes.
  4. Add garlic and ginger for 30 seconds, then the beef and sauce. Cook 1–2 minutes until thick. Serve over rice.

4. 10-Minute Chicken Fried Rice

The best way to use leftover rice. Cold rice fries best.

Ingredients: 4 cups cooked cold rice, 2 cups shredded rotisserie chicken, 1 cup frozen peas and carrots, 3 eggs, 2 tbsp oil, 3 green onions (sliced), 3 tbsp soy sauce, 1 tsp sesame oil.

  1. Heat oil in a large skillet or wok over high heat. Cook peas and carrots 2 minutes.
  2. Push veggies aside, scramble the eggs in the empty space.
  3. Add rice and chicken. Stir-fry 3–4 minutes until hot.
  4. Stir in soy sauce, sesame oil and green onions. Serve.

5. Creamy Tuscan Tortellini

Rich and cozy, made with store-bought tortellini.

Ingredients: 20 oz refrigerated cheese tortellini, 1 tbsp olive oil, 3 garlic cloves (minced), 1/2 cup sun-dried tomatoes (chopped), 1 cup heavy cream, 1/2 cup grated Parmesan, 3 cups baby spinach, 1 tsp Italian seasoning, salt and pepper.

  1. Boil tortellini according to the package (about 3 minutes). Drain.
  2. In a skillet, warm olive oil. Cook garlic and sun-dried tomatoes 1 minute.
  3. Add cream, Parmesan and Italian seasoning. Simmer 3 minutes.
  4. Stir in spinach until wilted, then add tortellini. Season and serve.

6. Shrimp Tacos with Lime Slaw

Fresh, crunchy and perfect for Taco Tuesday.

Ingredients: 1 lb shrimp (peeled), 1 tbsp chili powder, 1 tsp garlic powder, 1 tbsp oil, 8 small tortillas, 3 cups coleslaw mix, 1/4 cup sour cream or Greek yogurt, juice of 2 limes, cilantro and avocado to serve.

  1. Mix coleslaw with sour cream, juice of 1 lime and a pinch of salt. Set aside.
  2. Toss shrimp with chili powder, garlic powder and salt.
  3. Cook shrimp in oil over medium-high heat, 2 minutes per side.
  4. Warm tortillas. Fill with slaw and shrimp, top with avocado, cilantro and extra lime.

7. Pesto Chicken Pasta

Four main ingredients and big flavor. Great for lunch the next day, too.

Ingredients: 12 oz penne, 2 cups shredded rotisserie chicken, 1/2 cup basil pesto, 1 cup cherry tomatoes (halved), 1/2 cup grated Parmesan.

  1. Cook penne according to the package. Save 1/2 cup pasta water, then drain.
  2. Return pasta to the pot. Add chicken, pesto and a splash of pasta water.
  3. Stir over low heat 1–2 minutes until coated and warm.
  4. Fold in tomatoes and top with Parmesan.

8. Black Bean Quesadillas

A meatless dinner that costs a few dollars to make.

Ingredients: 1 can (15 oz) black beans (drained and rinsed), 1 cup frozen corn (thawed), 1 tsp cumin, 1/2 cup salsa, 2 cups shredded Mexican cheese, 4 large flour tortillas.

  1. Mash half the beans in a bowl. Stir in the rest of the beans, corn, cumin and salsa.
  2. Spread the mix on half of each tortilla, add cheese and fold.
  3. Cook in a dry skillet over medium heat, 2–3 minutes per side, until golden and melty.
  4. Cut into wedges. Serve with sour cream and more salsa.

9. Turkey Taco Lettuce Wraps

Low-carb, high-protein and full of taco flavor.

Ingredients: 1 lb lean ground turkey, 1 tbsp oil, 2 tbsp taco seasoning, 1/3 cup water, 1 head butter lettuce, 1 cup diced tomatoes, 1/2 cup shredded cheese, sliced avocado.

  1. Brown turkey in oil over medium-high heat, 6–7 minutes, breaking it up.
  2. Add taco seasoning and water. Simmer 2 minutes.
  3. Spoon into lettuce cups.
  4. Top with tomatoes, cheese and avocado.

10. Honey Garlic Salmon

Restaurant-quality salmon from your own stove.

Ingredients: 4 salmon fillets (6 oz each), 1 tbsp oil, 3 tbsp honey, 2 tbsp soy sauce, 3 garlic cloves (minced), 1 tbsp lemon juice.

  1. Pat salmon dry and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Cook salmon skin-side up 4 minutes, flip and cook 3–4 minutes more.
  3. Whisk honey, soy sauce, garlic and lemon juice. Pour into the pan.
  4. Spoon the sauce over the salmon for 1 minute until glossy. Serve with rice or a salad.

Tips for getting dinner on the table in 15 minutes

  • Prep before you cook. Chop, measure and mix sauces first. Cooking goes fast once the pan is hot.
  • Keep shortcuts on hand. Rotisserie chicken, frozen veggies, microwave rice and refrigerated pasta save real time.
  • Use a big skillet. A crowded pan steams food instead of browning it.
  • Cook rice ahead. Make a big batch on Sunday for fried rice and rice bowls all week.
